Nopal Cactus Salad Recipes for Arthritis 

For thousands of years the paddles and fruit of the Nopal Cactus (nopalitos) have been used by natives in Mexico and U.S. as a natural health food. They make great summer salads and will help you in your battle with arthritis.

I've included some recipes using nopal cactus here because of the supreme anti inflammatory properties of the nopal cactus fruit. It is nothing short of miraculous how a simple fruit juice can do so much for the human body.

Southwestern Cactus Salad

  • 16 ozs nopales (- fresh is best)
  • 2 cups tomatoes (chopped)
  • 1/2 cup diced onion
  • 5 jalapeno peppers (seeded and minced)
  • 1/2 cup fresh cilantro (leaves)
  • 2 lemons
  • 1/2 tsp garlic salt (optional)

Drain the nopal  cactus really well to remove any slime and salt and allow to drain.   In a medium size mixing bowl,  mix together ~ tomatoes, onions, cilantro, jalapenos and cactus. Squeeze the juice from both lemons over the mixture. Cover and refrigerate for at least 1 hour. Add garlic salt to taste and serve.

 Nopal Cactus with Eggs
(Nopalitos con Huevos)

  • 1/3 cup nopalitos 
  • 3 large eggs
  • 3 egg whites
  • 1 tbsp  milk
  • pinch of salt
  • fresh ground black pepper
  • cooking spray
  • 1/2 cup finely chopped onion
  • 1/2 cup tomato (chopped)
  • 4 corn tortillas (6-inch)
  • 2 tsps fresh cilantro (minced)
  1. Cook nopalitos in boiling water 10 minutes. Drain.
  2. Combine eggs, milk, salt & pepper in a saucepan stirring well with a whisk. ~ Do not overheat.
  3. Spray a medium pan or skillet with oil & add the onion, and saut√© 2 minutes or until tender. Add the egg mixture, and cook until bottom begins to set, stirring gently to scramble. Stir in the nopalitos and, tomato and cook  a further minute.
  4. Warm the tortillas according to package directions. Spoon about 1/2 cup egg mixture onto each tortilla. Sprinkle evenly with minced cilantro, fold in half ~ enjoy.
