Nopal Cactus Salad

I saw your nopal recipes and thought I would share this salad I make alot.
1/4 tsp salt
4 nopales (medium, trimmed, scraped, cut into strips)
1 tomato (large, cored, peeled, diced)
1 onion (small, diced)
6 fresh cilantro (stems, chopped)
3 tbsps olive oil
1 tbsp balsamic vinegar
pinch of oregano
1/8 tsp salt
8 romaine lettuce leaves
3 tbsps queso fresco (Mexican, crumbled)
2 peppers (pickled jalapeno, drained, sliced)
8 radishes (thinly sliced)
Fill a saucepan about halfway, bring to the boil and add salt. Add the cactus and bring back to the boil, simmering uncovered, until tender ~ about 20 minutes.
Drain the cactus, pat dry with a tea towel and place in a large bowl.
Add tomato, onion and cilantro; set aside.
Mix with a whisk or fork the oil, vinegar, oregano and salt; pour over the vegetables and toss.
Line serving plate with lettuce leaves; top with salad; sprinkle with cheese; garnish with jalapenos and radish slices.
